Like most of you, I’ve been cooking more at home than ever before. I’ve never been a big fan of delivery and now that NYC restaurants are closed for the foreseeable future, the kitchen has become my new friend! There’s something special about cooking from scratch and enjoying a nice homemade meal with your loved one(s).

Excited to share with you some of my go-to healthy & hearty recipes…

Eggplant Parmesan

This is a delicious and easy to make meal. We usually make it earlier in the day and put it in the fridge until we’re ready to pop it in the oven. We don’t use ricotta cheese, but I’m sure it’s delicious!

Mexican Quinoa Stuffed Peppers

Perfect substitute for your Taco Tuesdays! These Mexican stuffed peppers are so flavorful and delicious. We top them with fresh cilantro, lime juice, avocado, onion, and hot sauce.

Peach, Tomato & Corn Arugula Pasta Salad

This salad screams summer to me! If you want to make it even healthier, you can leave out the pasta or add in chickpeas. So fresh!

Spaghetti Squash

While this isn’t a recipe for an entire dish, Love & Lemons gives great instructions for how to roast spaghetti squash, if you haven’t done so before. After your squash is ready, top with any pasta sauce or dressing. We’ve done tomato sauce and turkey meatballs, pesto sauce, and our signature pasta sauce (olive oil, garlic powder, salt, pepper, oregano, parmesan and crushed red pepper) with chicken sausage.

Classic Greek Salad

We love a classic greek salad. I often mix it up by adding additional peppers (yellow, orange, or red), and swapping out the feta cheese for Avocado. I usually don’t include the mint, but it can be refreshing if you’re into that. If you want to to add protein, a simple chicken, shrimp, or salmon would be great. We’ve also added turkey meatballs and really enjoyed the flavors together. Super simple and delicious.

Orange-Roasted Rainbow Carrots

I once listened to a podcast with Doctor Robynne Chutkan who believes that the key to life is veggies, dirt, and sweat. She said, “you know those perfect little carrots in a bag at whole foods? Those are fine, but do you know what’s even better? Those big goofy looking carrots that have dirt all over them.” And she’s so right. Here’s a great recipe for how to make simple yet delicious carrots — and make sure to get the goofy looking ones covered in dirt!

Kale Cesar Salad

with a Twist

Take your normal kale cesar salad and turn it up a few notches. This salad is hearty, healthy, and delicious. With sweet potatoes, chickpeas, kale, brussels sprouts, and avocado, what’s not to like?

Carrot Ginger Soup

I love a good soup, and Sakara Life knows what they are doing when it comes to clean recipes. This simple recipe is perfect for lunch, dinner, or a snack. Throw some sunflower seeds on top for an added crunch.
