Yummiest Lactation Cookies

As most mom’s know, feeding your baby can be the most challenging part of the newborn phase. Prior to having my daughter, my sister (who had 3 beautiful boys before me), sent over her favorite lactaction cookie recipe — and I can attest to it’s deliciousness. Around week 37 of both of my pregancny’s I made these cookies and put them in the freezer so I could start eating them right when I got home from the hospital. Inevitably, I always make them a few more times in the early months because they help with producing milk, and it’s a great snack to grab anytime throughout the day because let’s be real, while breastfeeding our hunger is next level! Hope you enjoy these as much as I have!

INGREDIENTS:

1 cup butter (softened)

1 ½ c brown sugar

4 TBSP water + 2 TBSP flaxseed meal

2 eggs

1 tsp vanilla

2 cups flour

1 tsp baking soda

1 tsp salt

3 cups steel cut oats or rolled oats (I prefer rolled or a mix of the two)

1 1/2 cup chocolate chips or any other ingredients you may enjoy

4 TBSP Brewers yeast (the good stuff!)

INSTRUCTIONS:

Preheat oven to 350. Mix flax seed meal and water in a cup and set aside for 5 minutes. 

In a bowl, cream the butter and brown sugar together. Add eggs one at a time and stir them in. Add flaxseed meal mixture to the butter, sugar, and egg mixture. Add vanilla. 

In a separate bowl mix together the flour, baking soda, salt, and brewers yeast. Add the wet and dry ingredients together. Add the steel cut oats and chocolate chips to the batter. 

Drop in spoonfuls and bake for 10-12 minutes on a cookie sheet. 

Once cooled, you can place them in freezer bags or a container for storage.
