6 Recipes I tried in March

It’s been a full year since the start of the pandemic, and my at-home cooking game is getting stronger by the week. I’ve never been a cook (I do love to bake though!), so this exploration has been a fun one. Pre-pandemic, I just didn’t have the time to get groceries (and all of the ingredients!) and make dinner when I wouldn’t get home until at least 8pm most nights. My husband would also work until midnight at the office, so I was usually doing dinner solo. Now that we’re both home, and have plenty of time to get things done during the day, I’ve been experimenting with so many different recipes and having a lot of fun with it.

Here are some of my favorite recipes I tried in March!

Easy Coconut Curry

Hands down probably our favorite recipe the entire month. This curry recipe is easy to make, and packs a punch of flavor from turmeric, ginger, more delicious spices & fresh chiles. We used butternut squash and cauliflower, but you could easily substitute for whatever vegetable you prefer! Can’t wait to make this again soon!

Incredible Slow Cooker Pulled Chicken Sandwiches

We loved these delicious and flavorful pulled chicken sandwiches, perfect for any weeknight (or upcoming bbq!)

Easy Creamy Vegan Tomato Soup

I’m a big tomato soup fan, and this recipe is by far my favorite. The coconut milk gave it the perfect texture and a hint of sweetness. It’s the perfect lunch or dinner with your favorite crackers, garlic toast, grilled cheese, or anything your heart desires.

Mexican Quinoa Stuffed Peppers

With only 10-ingredients, these Mexican Stuffed Quinoa Peppers are absolutely delicious, fulfilling, and healthy! The recipe makes enough for 4, so if there’s only 2 of you, you’ll definitely have leftovers!

30-Minute Cashew Alfredo

We’ve been experimenting with different vegan pasta sauces, and this one quickly went to the top of our list. With only ingredients and a quick 30 minute recipe, you’ll have a delicious plant-based alfredo sauce to pour on top of your favorite pasta noodles.

Tortellini Soup

A super cozy, nourishing, and flavorful meal for dinner. It cooks up in just over 30 minutes, so it’s easy to make on a weeknight, and it’s packed with flavorful veggies and herbs. Throw in your favorite tortellini and you’ll be good to go!
