5 Recipes I tried in August
Since the beginning of Covid, I’ve had a lot of fun trying new recipes. With extra time on my hands, I no longer feel stressed trying new recipes, and I actually enjoy the process. Here are a few of the best recipes I tried in August (all from Ambitious Kitchen), of course!
Peach Corn Arugula Pasta Salad
We recently made this salad for a picnic with friends. Our friends happen to be gluten free and dairy free, so we substituted for chickpea pasta and left out the feta and it was still equally as delicious. Make sure to try this recipe soon as peaches are in season and absolutely delicious right now.
Blueberry Muffins
These. Blueberry. Muffins. Are. Amazing.
Truly, the best blueberry muffins I have ever made (or had!). I think the almond extract really adds a lot (even though it’s such a small amount), and the crumble topping is a nice touch. I brought these to two different friends houses for weekends away and they were a big hit for morning breakfast!
Tomato Basil Soup
While this wasn’t the best tomato basil soup I’ve ever had, it’s a great light option and I would certainly make it again. I think it may need some more spices or perhaps cream. I’m going to do some more experimenting with it so I can find the right mix that works for us. We did make grilled cheese with this, which was amazing!
Salmon with Peach Avocado Salsa
We make salmon at least once a week, usually with the spices we have in our kitchen. We ended up having a bunch of leftover peaches that were super ripe (and we always have avocados), so we decided to whip up this meal one night. It’s so super flavorful, and perfect for summer.
BBQ Ranch Chicken Quinoa bowls
We love any excuse to use our slow cooker (because we seriously never use it!) This recipe is extremely easy to make, very filling, and satisfying. You can also switch up the toppings to include your favorite veggies. We did beans, avocado, tomatoes, corn, onions, and sunflower seeds.
