Flourless Chocolate Chip Cookies

I recently fell in love with these flourless chocolate chip cookies. While the recipe calls for Peanut Butter, I have been using Almond Butter instead and it makes for an almost caramel-like flavor. The only other substitutions I made was adding in a bit of vanilla extract, and putting the cookies in the fridge for 30 minutes before baking (this makes them more flat - similar to a tate’s cookie).

INGREDIENTS:

1/4 cup butter (don’t melt it!! Make sure it’s cold when you mix it)

1/2 cup of natural Peanut Butter (I use Almond Butter)

1 large egg

1/2 cup sugar

1/2 cup brown sugar

1 tsp. baking soda

1 tsp. vanilla

1/4 tsp salt

2 cups oats

3/4 cup chocolate chips (I use dark ghirardelli chocolate chips)

INSTRUCTIONS:

Beat the butter, peanut (or almond) butter, and egg until smooth

Add sugar, brown sugar, baking soda, vanilla, and salt, beat until smooth

Add oats and stir until fully mixed

Stir in the dark chocolate chips

Put in the refrigerator for 30 minutes while you preheat the oven to 350F

Bake for 9-11 minutes and let cool
